This is my first serious dish I learned to make after her marriage. Juicy, tasty red fish in a delicate cream shell.

Cooking
Softened margarine, chopped into pieces.
Give the dough a ball shape, wrap in foil and put in the fridge overnight.
From fish fillet to remove the bones and skin, if any. Wet cloth, sprinkle with lemon juice and pepper. Do NOT add SALT (and then the fish will be dry).
Leek disassembled into individual leaves
And blanch in boiling water for 3 minutes.
Then rinse the onion with cold water from the tap and let it drain. On a towel lay the leaves of the onions are slightly overlapped and dry with a cloth.

Grease the edges of the dough with egg white. Put on top of the second "fish" out of the dough and press the edges well. Of the remaining dough make the eyes and mouth of a fish.
Scissors make incisions on the fish to mimic scales.
Mix the egg yolk with milk.
This mixture lubricates the fish and bake it in the oven for 40 minutes. Temperature of 180-200 degrees.
