Shrimp in coconut milk in Mozambique

Ingredients

  • Shrimp

    1 kg

  • Onion

    1 piece

  • Tomato

    2 piece

  • Coconut milk

    400 ml

  • Saffron

    0.25 tsp

  • Salt

  • Olive oil

  • Peppers red hot chilli

    1 piece

Cooking

In hot olive oil fry until Golden brown sliced onion half rings.

Add the tomatoes finely diced or pureed in blender, simmer about 10-15 minutes. The tomatoes will get too soft and the consistency will resemble a thick tomato sauce.

Add shrimp, simmer another 10 min.

Salt, add the coconut milk with pre-dissolved saffron and chopped hot Chile pepper.

Simmer for another 15 min.

Serve in a dish with white boiled crumbly rice. Decorate with coriander. The dish is served hot or warm or cold, in the form of snacks. Cold perfectly with toasted white bread.
