Chicken thighs in pepper-eggplant sauce
Chicken thighs baked in the oven with the eggplant and pepper, simple and tasty dish. Excellent option for dinner at home.

Ingredients

  • Chicken thigh

    1 kg

  • Leeks

    200 g

  • Sweet pepper

    500 g

  • Eggplant

    400 g

  • Tomato

    300 g

  • Soy sauce

    4 Tbsp

  • Garlic

    3 tooth

  • Vegetable oil

    2 Tbsp

  • Sugar

    0.5 Tbsp

  • Salt

    1 Tbsp

  • Black pepper

    0.5 tsp

  • Bay leaf

    1 piece

Cooking

For cooking you will need a fireproof baking dish.

Eggplant and pepper and I cut my cubes.

Leeks cut into slices. The garlic was crushed.

In a heated pan pour vegetable oil, put vegetables. Add sugar, 1/2 tbsp salt, ground black pepper, mix. Stir fry vegetables on high heat for 2-3 minutes. Then remove from heat.
