Very tasty rolls of omelette with a filling of eggplant baked under a cheese crust. Suitable for Breakfast or an afternoon snack, or as a separate main dish.

Eggplant put in a glass form for the microwave, pierce the skin with a toothpick in several places. Bake in the microwave at maximum power for 15 minutes.
Eggs, milk and flour to make the batter for the omelet, season with salt and pepper.
From the resulting dough to make 3 pancake-omelette, fry them in vegetable oil with 2 sides.
Chop the chard, season with salt and pepper, fry in vegetable oil.
Baked eggplant cut in half. With a spoon select the pulp, mash it, add half grated cheese, salt and pepper, mix well.
The omelet smooth a thin layer spread the stuffing on top of eggplant...
... and then, on top of the chard.
Cut into small pieces (about 1 cm), put in a glass form for the microwave.
Sprinkle the top with remaining cheese. Put in the microwave for another 2 minutes.
