Yolk and lemon juice blend in a tall narrow glass to a creamy opaque emulsion.
Still whisking, pour in a glass a thin stream of vegetable oil. The mixture will thicken pretty quickly. Add, whisking, the remaining oil or add warm boiled water for a more liquid consistency.
At will mayonnaise you can add a pinch of salt, granulated sugar, ground white pepper. Simple, but tasteful!
