Lean roast with French fries
I want to offer the option of vegetable dinner. Potatoes fries cooked without oil in the oven, and a very satisfying vegetable roast. The recipe is from the magazine "School of Gastronome".

Ingredients

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Mushrooms

    100 g

  • Vegetable oil

    2 Tbsp

  • Sauce

    100 g

  • Beans

    150 g

  • Greens

    1 coup

  • Salt

  • Potatoes

    400 g

  • Tomato

    1 piece

Eggplant wash, cut into slices, RUB with salt. Leave for 10 minutes. Wash.

Slice the vegetables. Eggplant cut into cubes. Onion cut into half rings. Tomato slice. Mushrooms cut into quarters.

Heat in a thick-walled pan with vegetable oil. Fry eggplant and onions for 4 minutes. Stirring constantly to avoid burnt.

Add the mushrooms and sauté over high heat, stirring 4 minutes.

Add tomato, fry for 2 minutes. Add tomato sauce, salt to taste, reduce heat and simmer 10 minutes.

Add the beans with juice and stew 5 minutes.

Preheat the oven to 220 gr. Potatoes I have ready, frozen.

Not defrosting, place in a pan and bake for 15 minutes So the potatoes do not require oil, and it appears as if cooked in a deep fryer. Bake until the potatoes will become a Golden color.
