Pumpkin and semolina muffins with dried apricots
To continue the pumpkin theme - treat muffins. I don't even remember where I found this recipe when I was cooking the first time, was almost sure that it will throw this strange liquid mass in the trash. But they happened, and turned out excellent! The next time I was cooking already with pumpkin, and cupcakes are even tastier.

Ingredients

  • Semolina

    1 cup

  • Yogurt

    250 ml

  • Chicken egg

    2 piece

  • Sugar

    2 Tbsp

  • Leavening agent

    2 tsp

  • Pumpkin

    300 g

  • Dried apricots

    15 piece

Cooking

Dried apricots pour boiling water.

Grind eggs with sugar

Steamed pumpkin Porirua.

Add pumpkin puree to the eggs, pour kefir, mix thoroughly. A thin stream of semolina and mix up. Put the mass into molds about 2/3 full in each mold to "drown", 1 dried apricots.

I got 12 muffins: 6 small and 6 bigger.

Bake in a preheated 170 degree oven for 40 minutes.
