Eggplant in a soy-ginger caramel
I suggest You to try eggplant in the Chinese style. Quick, easy and accessible. This hot appetizer is perfect for lovers of salty-sweet taste.

Ingredients

  • Eggplant

    1 piece

  • Salt

    0.5 tsp

  • Egg white

    1 piece

  • Potato starch

    1 Tbsp

  • Onion

    1 piece

  • Garlic

    3 tooth

  • Ginger

    0.5 tsp

  • Coriander

    0.5 tsp

  • Honey

    1 tsp

  • Sugar

    1 tsp

  • Vegetable oil

    1 tsp

  • Soy sauce

    2 Tbsp

Coarsely chop the eggplant, add salt and leave for 15-20min. and then squeeze them dry. This will help to absorb less fat. To the eggplant add the protein, starch and mix thoroughly (preferably by hand). Fry in deep fat and put on a paper towel.

While the eggplant cools, prepare the caramel. In the pan combine honey, sugar, ginger, coriander, vegetable oil, soy sauce (I used Kikkoman TM) and mix until smooth.

Cut the onion coarsely and fry until Golden brown, add the chopped garlic and prepared sauce. Stir, stew 2 minutes and turn off the stove.

To the caramel add the eggplant and mix well.
