Chicken baked with thyme and lemon
Chicken baked with thyme, lemon and tomatoes, with a salad of zucchini. Fragrant salad with acidity complement the rich taste of chicken. Ribbons of zucchini make the dish very pretty. No other garnish is not required, so it is quite easy.

Ingredients

  • Chicken thigh

    6 piece

  • Cherry tomatoes

    400 g

  • Olive oil

    100 g

  • Lemon

    1 piece

  • Garlic

    2 tooth

  • Thyme

    1 Tbsp

  • Zucchini

    3 piece

  • Oregano

    2 Tbsp

  • Olive oil

    50 ml

  • Lemon

    1 piece

  • Parmesan

    50 g

1. For marinade mix olive oil, lemon zest, juice, garlic, thyme, add freshly ground black pepper. Pour the chicken marinade and leave for 30-40 minutes. Preheat the oven to 200 C.

2. Put the chicken on a baking sheet with a small amount of the marinade and bake for 20 minutes.

3. For salad: mix all ingredients, add salt and pepper, stir and leave for a while to lettuce soaked.

4. Remove the pan from the oven and add the tomatoes. Bake another 10 – 15 minutes.

5. Arrange salad on plates, sprinkle with Parmesan shavings and oregano and serve along with chicken and tomatoes.

Try another option of a salad of zucchini with garlic and thyme. Simply substitute oregano for the thyme and add the garlic clove, passed through press.
