Cooking

step-0
I started training before departure to the cottage, ground spices in a mortar. For 1 kg of wings I got: 1/3 tsp. fennel seeds, fennel seeds, cumin, sumac, red hot pepper; 1/2 tsp mustard seed and black pepper; 1 tsp coriander. 1 piece of cardamom and a handful of dried oregano. Very important to me - freshly ground spices, but you can take and ready, approximate the composition of the spice mixture.
step-1
When we arrived at the cottage, the first thing I did was marinate the wings. You need to connect the prepared spice mixture with lemon juice and honey. Cocoa put in the marinade with all the spices.
step-2
Then add the ketchup - it is better to take tomato - it has a more relaxed flavour - intensity give us spices. Add the finely chopped garlic.
step-3
All mix well.
step-4
The marinade calls out wings and add approximately 1 tsp of salt. Mix well, cover and leave for 2 hours to marinate.
step-5
After 2 hours the long-awaited frying time. Prepare the coals. Frying wings is not difficult, but the difficulty is that we have a sweet marinade, and those who once tried to fry the meat, soaked in sweet marinade, faced with the problem that the meat gets burned, because the sugar starts to burn very quickly. So - it plus wings in that they are not very large and are rapidly gaining temperature for frying - so they can quite often turn over. Just don't drop your wings and every 5 minutes turn - it all depends on heat.
step-6
During roasting it is necessary to grease with marinade wings - then there will be mouthwatering, delicious crust caramel color.
step-7
Don't forget to prepare the tomatoes, greens, onions podgainaya and, of course, get a beer out of the chill! And Enjoy!
