Bought my husband the blue cheese, but we did not like. On this occasion, I found a casserole recipe on the Internet and loved all the home. A great option to diversify the menu.

Cooking
Potatoes cooked in their skins. While the potato is cooking, prepare the filling. Blue cheese cut into small cubes.
Onion and parsley finely chop. Parsley I had already chopped from the freezer.
To the cheese, the onions and the parsley add the egg (see photo two eggs because I have 2 variety, very fine) and whisk. Leave the stuffing aside.
Potatoes should boil. Drain and peel the potatoes while it is hot.
Add to the potatoes the butter, milk and a little salt (not much salt because the cheese is very salty).
To make the puree, it will be a little watery.
Then you can prepare in two ways. Option 1: In a silicone mold to put a spoonful of mashed potatoes in the middle put the stuffing.
Put another spoonful of mashed potatoes, flatten is optional, so even be more interesting.
Option 2: Mix stuffing and mashed potatoes.
Spread in a baking pan, greased and floured. Put everything in a preheated 200 C oven and bake until Golden brown. I it goes 35-40 minutes.
