Even in the North of Italy spring has come! Blooming apricots and magnolias in the garden, on the street heat, and we with friends decided to organize a barbecue. Snacks were with me and I made two Focaccia. I want to offer this Focaccia, it is high, soft, delicious tomatoes.

Cooking
One large potato, peel and slice, boil in a little water.
Potatoes get a slotted spoon, a potato broth to keep pour. Potatoes mashed with a fork.
In a small amount of warm (not hot!) broth dissolve the yeast with sugar, let stand for 7 minutes.
In flour, add yeast, mashed potatoes, 2 tablespoons of olive oil, a pinch of fine salt, adding gradually warm potato broth (1.5 cups), knead sticky and soft dough.
Put the dough in a large bowl, cover with a dry towel, remove for 1.5 hours. Then punch down and put back on the delay for 1,5 hours.
Prepare tomatoes caramel: in a saucepan heat the honey, add the mustard seeds (or half a teaspoon of sweet mustard), and heat a few minutes, add the balsamic vinegar,
Put in a casserole the tomatoes, saute for 5 minutes, to get.
The dough place in a greased form (my form size 35х25), press tomatoes into the dough, sprinkle with oregano dry or fresh, sprinkle a pinch of coarse sea salt, pour the remaining olive oil. Cover with a towel and leave to rise for 30 minutes.
Bake at 200*C without ventilation 30-35 minutes, readiness check toothpick. Allow to cool in the form. Serve warm or cold. Good Focaccia with white wine! Bon appetit!
