Armenian soup
Traditional Armenian winter warming soup. Will appeal to fans of cabbage. In the original recipe this soup is meatless, but I did the lean version (in meat broth). Instead of bulgur you can use pearl barley or rice. I would strongly recommend to cook this flavorful soup!

Ingredients

  • Sauerkraut

    400 g

  • Potatoes

    3 piece

  • Broth

    2 l

  • Bulgur

    100 g

  • Onion

    2 piece

  • Tomato paste

    2 Tbsp

  • Vegetable oil

    2 Tbsp

  • Dried apricots

    6 piece

  • Salt

    1 tsp

Cooking

Cut onions into cubes and fry with oil.

Add sauerkraut and fry all together.

Add bulgur.

I use bulgur TM Mistral.

Add the tomato paste and chopped cube potatoes.

Add broth or water (for meatless option) to desired thickness. In the traditional version of the soup is quite thick. Cook over low heat for 30 minutes. Serve with dried apricots.
