Muffins with Ricotta cheese
This replaces my cheese curds, which we have.

Ingredients

  • Chicken egg

    2 piece

  • Sugar

    1 cup

  • Ricotta

    6 Tbsp

  • Potato starch

    2 Tbsp

  • Flour

    1.5 cup

  • Leavening agent

    1 tsp

  • Soda slaked vinegar

    1 tsp

  • Margarine

    80 g

  • Vegetable oil

    3 Tbsp

  • Raisins

    0.5 cup

  • Dark chocolate

    100 g

Beat the eggs with the white sugar, then, continuing to whisk, add the cheese. Mix melted margarine with vegetable oil, pour into batter, mix well. Then mix the flour, starch, baking powder, sift into the batter and beat with a mixer. Add chopped apricots and mix. In the end, add soda slaked vinegar and beat again.

Preheat the oven to 170 degrees. Bake in silicon or iron in the form with paper cuffs for cupcakes. Bake for 20-25 minutes.

The finished muffins to cool and cover with melted chocolate. Enjoy your tea!
