Tomato pancakes stuffed with arugula
Very beautiful and spring pancakes. Starting turns out tender, fresh and rich at the expense of cheeses. And adding the tomatoes to the dough adds flavor and bright color.

Ingredients

  • Flour

  • Chicken egg

  • Milk

    250 ml

  • Tomatoes in own juice

    0.5 can

  • Salt

  • Vegetable oil

    2 Tbsp

  • Arugula

    50 g

  • Chicken egg

    1 piece

  • Feta

    2 Tbsp

  • Cheese

    30 g

  • Green onions

    3 piece

Cooking

In a bowl break the egg, add salt and whisk

Sift flour in bowl

Pour the milk, stir whisk to avoid lumps

Grind tomatoes in blender and add to the dough.

Add 1 tbsp oil and remaining milk.

Eggs boil until cooked and cut into small dice. Arugula and onions finely chop, cheese grate on a fine grater, feta, crumble with your hands.

Mix up the filling and try, if necessary, salt.

Bake pancakes on one side put the filling and wrap in rolls.

Fry the rolls in vegetable oil.
