Squash-potato pancakes
At the height of zucchini season I want to offer You, dear Cooks, another budget option of cooking squash fritters.

Ingredients

  • Zucchini

    2 piece

  • Potatoes

    2 piece

  • Chicken egg

    2 piece

  • Flour

    4 Tbsp

  • Bread crumbs

    4 Tbsp

  • Parsley

    1 Tbsp

  • Salt

    1 tsp

  • Black pepper

  • Vegetable oil

    5 Tbsp

  • Onion

    1 piece

  • Mint

    1 Tbsp

Cooking

This is all the necessary products.

Zucchini, potatoes and onions wash, peel and grate on a coarse grater.

Add eggs and all mix well.

Add chopped parsley and mint, salt, pepper and again mix everything.

Now add the flour and the breadcrumbs, mix well all the products. The dough should get as pancakes, if watery, you need to add more flour or breadcrumbs.

Put the pancakes on a well heated pan with vegetable oil.

Fry pancakes on medium heat on both sides until Golden crust.

Here are some great ones we have. If you want you can add to the dough a little grated garlic.
