Yeast breed in warm water, add a tsp of sugar and allow them to rise to the frothy "cap"
Grind buckwheat in a coffee grinder into flour.
In a bowl, pour the yeast, add ingredients and knead the dough. Next, knead the dough on a work surface (I did this at the table), periodically adding oil. Leave the dough to rest for 1 - 1.5 hours Doing 2 punching.
I have the dough rise 2 times per hour.
Roll the dough into a pancake, sprinkle with cinnamon, sugar and sesame seeds.
Turn the roulade and decorate with sprigs of dough, grease with vegetable oil. Sprinkle top with sesame seeds. Bake on sheet lined with parchment, at a temperature of 170-180 degrees for 25 minutes. Before cut - ready roll need to cool down a bit.
