Eggplant curry in coconut milk
Hi everyone, I want to share with you the recipe "eggplant Curry in coconut milk"! A simple and delicious dish for lovers of Asian cuisine! Cooked very quickly!

Ingredients

  • Chicken breast

    300 g

  • Eggplant

    500 g

  • Coconut milk

    400 ml

  • Onion

    2 piece

  • Garlic

    2 piece

  • Curry

    1 Tbsp

  • Peppers red hot chilli

    1 piece

  • Cinnamon

    1 piece

  • Salt

  • Flour

    1 tsp

  • Turmeric

    1 Tbsp

  • Anis

    1 piece

  • Vegetable oil

    4 Tbsp

Cooking

Eggplant clean, cut into small cubes, scalded with boiling water and let the water drain out.

Chicken cut into small pieces.

Turmeric mixed with flour and and roll in her eggplant.

Onions and garlic peel and finely chop. Bitter pepper to clear of seeds and also finely chop.

Heat sunflower oil in a wok and fry the aubergines for 3 minutes.

Add chicken breast and fry all together another 5 minutes.

Add the onion, garlic and hot pepper.

Pour into the wok the coconut milk, add the anise, cinnamon stick and curry powder.
