Italian zucchini boats
These delicious, spicy Italian zucchini boats full of fragrant cheese and vegetable intake, and are ready in just half an hour.

Ingredients

  • Zucchini

    2 piece

  • Garlic

    2 tooth

  • Tomato

    1 piece

  • Mushrooms

    4 piece

  • Spinach

  • Oregano

    0.5 tsp

  • Basil

    0.5 tsp

  • Peppers red hot chilli

    0.25 tsp

  • Olive oil

    2 Tbsp

  • Parmesan

    0.75 cup

  • Basil

    2 Tbsp

Cut zucchini in half lengthwise, remove pulp and seeds, leaving the shell intact (use a small spoon for this). The flesh of two zucchinis finely chop.

Also finely chop the garlic, tomatoes, mushrooms. Add Basil, oregano. Grind red pepper. Combine all in a medium bowl with olive oil and 2/3 of the cheese.

Divide the mixture in pumps of zucchini.

The remaining stuffing can prigotovit thus: to make foil shape with sides and bake it. On top of the foil closed.

Place stuffed zucchini in a baking dish, cover with foil. Bake for 25 minutes or until the zucchini are soft. Sprinkle with remaining cheese. Bake without the foil for another 5 minutes or until cheese melts. Sprinkle the finished dish with fresh Basil.
