Cooking
In warm milk (100 ml), stir the sugar and yeast, add 2 tbsp of flour ( from the bulk), mix thoroughly and leave in the warmth for 10 minutes, to form a "cap".
Raisins to sort, wash and cover with brandy. Set aside.
In the dough add the flour (leave 2 tbsp - may not be required), the remaining milk and the egg, beaten with salt, and start kneading. Then add soft butter, cinnamon, vanilla sugar.
Knead the dough. In a food processor 5 to 7 minutes on medium speed, manually about 15 minutes.
Cover with cling film and leave for 1 hour in a warm place. The dough will increase in 2 times.
10 minutes before forming the pie slice washed the quinces and apples.
Divide the dough into two equal parts, leaving 100 g for decoration. One roll and put on parchment.
Put the stuffing : quince and apples in a single layer, sprinkle with raisins.
Again on top of the apples and the quinces.
Sprinkle with cane sugar. I use universal cane sugar TM Mistral.
Roll out second part of dough and cover her stuffing, Zaseev. Shaping the bag of Santa Claus. To turn on the oven to warm up.
Oh! Bag with a hole to Patch...... Leave for 20 minutes for proofing. Before landing in the oven grease the pie with a mixture of yolk and cream.
Bake 45 minutes at 180 - 190 degrees, to "a dry splinter," and a beautiful blush, focus on your oven.
