Bread with raisins and cinnamon
Fragrant bread natural yeast. Ideal for Breakfast and for sandwiches with cheese and anchovies.

Ingredients

  • Flour

    300 g

  • Rye flour

    75 g

  • Flour

    25 g

  • Salt

    1 tsp

  • Cinnamon

    0.5 tsp

  • Sourdough

    150 g

  • Water

    175 ml

  • Olive oil

    50 ml

  • Yeast

    1 tsp

  • Honey

    25 g

  • Raisins

    125 g

Mix 3 kinds of flour with salt and cinnamon. In another bowl, mix the yeast with water, olive oil and yeast, and add honey and raisins.

Mix the flour and starter mixture. Stir well with your hands. Get a thick lump. Shoot with it scraps of dough and leave the dough, covered with a towel, to rest for 10 minutes. Grease your work surface with vegetable oil and knead the dough for 10 seconds, stretching it and folding test for enrichment with oxygen. Flatten the dough into a ball. Wash bowl, grease with vegetable oil and put the dough in it, covered with a towel. Leave for 10 minutes to rest. Knead again and again to form a ball and leave in a bowl under a towel to rest for 1 hour.

Towel well dusted with flour. Pull the middle. The dough on the table, podpylenny flour, form into a ball. Stretch it out and flatten to make a pancake. Make a hole with your hand in the middle. Get a big bagel. Put it on a towel, stretch the towel across the middle. This is to ensure that the dough when proofing is not closed again. Cover with a towel and leave for 4-5 hours. The dough should increase by almost half.

Preheat the oven to 210 degrees. Bread cut into a circle, somewhere 5mm in depth. Flip the bread upside down on a baking sheet and bake for about 50 minutes until cooked bread.

Pull out the bread and cool on wire rack. Preferably it is good to cool before cutting. I have, unfortunately, failed. Family members immediately decided to try it :)
