Eggplant with beans
This vegetable dish can be used as a separate dish or as a side dish. Very satisfying, tasty and fragrant. Perfect for fasting and vegetarian diet.

Ingredients

  • Eggplant

    200 g

  • Beans

    50 g

  • Carrots

    70 g

  • Onion

    1 piece

  • Tomato paste

    1 Tbsp

  • Garlic

    1 tooth

  • Salt

  • Sunflower oil

    3 Tbsp

  • Soy sauce

    1 Tbsp

Cut the eggplant, sprinkle with salt and leave for 15-20 minutes to left bitterness. Then wash them and dry.

Cut the onion half-rings, carrots cut into strips. Fry them in butter 7-10 minutes. Then add the eggplant and fry for another 5-7 minutes.

Then put tomato paste, soy sauce, pour 1/2 Cup of water. Bring to a boil, reduce the heat to medium and simmer 15 minutes.

For this dish I used soy sauce TM Cccamp

In the end add the beans, salt, pepper, garlic. Keep on heat for another couple of minutes and remove.

Before serving, sprinkle with herbs. Bon appetit!
