Muffins with pumpkin, zucchini and raisins
Delicious and easy to prepare muffins with raisins and slices of pumpkin and zucchini.

Ingredients

  • Raisins

    50 g

  • Pumpkin

    100 g

  • Zucchini

    100 g

  • Sunflower oil

  • Chicken egg

    3 piece

  • Sour cream

    3 Tbsp

  • Sugar

    1 Tbsp

  • Salt

  • Leavening agent

    1 tsp

  • Flour

    100 g

  • Walnuts

    70 g

Cooking

Raisins wash, pour hot water and leave for 10-15 minutes, then drain the water.

Pumpkin and zucchini peel and seeds and finely chop.

In a pan pour a little sunflower oil IDEAL.

Fry the pumpkin and the squash.

In a deep Cup mix the sour cream, eggs, sugar and salt.

Add the flour and baking powder.

Mix well. The dough should have the consistency similar to thick cream.

In the dough add the raisins and roasted pumpkin and zucchini.

Mix well.

Molds lubricated with sunflower oil IDEAL.

Put the dough with pumpkin, zucchini and raisins. bake in the oven at a temperature of 180-190 degrees for 20 minutes (depending on oven).

To get the muffins out of the tins, place them on a baking sheet and using a cooking brush to grease lightly beaten egg.

Walnuts grind.

Sprinkle muffins and bake in the oven for another 5 minutes.
