Orange-cranberry muffins with flax seed
Recently learned that milled flax seed can replace eggs in baking, and decided to try it! The result I was very pleased at the prepared muffin was very interesting "sticky" texture and the dough is a very moist, soft and tender. Cranberries pleasantly burst in your mouth, and the nuts make them a good company and wonderfully complement the overall picture of taste!

Ingredients

  • Flour

    2 cup

  • Brown sugar

    1 cup

  • Leavening agent

    2 tsp

  • Orange zest

    1 Tbsp

  • Walnuts

    3 handful

  • Orange juice

    1 cup

  • Vegetable oil

    80 ml

  • Flax seeds

    1 Tbsp

  • Water

    3 Tbsp

  • Cranberry

    1 cup

Cooking

In a dish mix the flour, sugar, baking powder, chopped nuts and orange zest.

Used a small unrefined cane sugar TM Mistral. This sugar is especially recommended for baking as it fills the product with a soft caramel taste.

Flax seeds grind in a coffee grinder, fill with water, allow to stand for 5 minutes.

Mix in a separate container orange juice, butter and flax seeds with water.

Pour the liquid mixture into the dry, mix the batter with a spoon.

Add berries, stir.

Test fill the molds for muffins, filling them 3/4 full, and sent in heated to 190 degrees oven for 20-25 minutes.

Readiness check with a skewer it should come out dry from the center. Turns out not only delicious, but also very beautiful!
