Cooking
Eggplant, wash, dry with paper towel, cut into slices thickness of about 5 mm. season with Salt and leave for 15-20 minutes. Then blot each slice with paper towel.
Lay the slices on a baking sheet covered with parchment pepper. Bake in a preheated 200*C (400*F) for about 8-10 minutes.
Spinach to defrost and squeeze well. You can use fresh spinach, only it must be pre-chopped and slightly put out. In bowl combine spinach, ricotta, Parmesan, egg, salt, pepper, and passed through the event news garlic. Mix well.
Baked on each slice put a tablespoon (heaped) of filling and spread the filling evenly across the slice. Twist roll starting from the narrow side of the slice.

Sprinkle grated on a coarse grater mozzarella. Cover with foil and bake about 40 minutes at 180 *C (350*F).
