Cooking
Soak rice in warm water for 10 minutes, drain in a sieve.
Olive oil ( 1 tbsp)and pour into the pan and heat over medium heat. Fry the pine nuts for 1-2 minutes, until Golden brown, stirring occasionally. Transfer to a plate.
In a pan add the olive oil and fry (5-7 minutes)and finely chopped onion, stirring from time to time.
Add the rice to the onions and fry for 2 minutes.
Pour hot water, salt (I salted). Add saffron (or turmeric). Increase the heat to high and bring to a boil. Stir, cover, reduce heat to minimum and cook for 30 minutes (the lid is not raised). Turn off the heat and leave the rice (without opening the lid) for another 15-20 minutes.
Cooked rice to shift in a bowl, sprinkle the roasted pine nuts. Bon appetit!
