Chickpeas curry with coconut rice
I suggest to try a delicious Lenten dish. Chickpeas - source of protein during lent, and it goes well with fragrant rice.

Ingredients

  • Chickpeas

    200 g

  • Tomato

    1 piece

  • Olive oil

    2 Tbsp

  • Salt

    0.5 tsp

  • Cinnamon

    1 piece

  • Cilantro

  • Coconut milk

    3 Tbsp

  • Onion

    1 piece

  • Garlic

    3 tooth

  • Curry

    0.5 Tbsp

  • Figure

    1 cup

  • Water

    3 cup

Cooking

Chickpeas overnight to soak in water, then boil until tender

In a pan heat olive oil, fry the onion, garlic, tomato

Add boiled chickpeas, curry and cinnamon stick

Cover with water and simmer for 20 minutes, until the liquid is almost evaporated

Boil the rice in water with coconut milk, add the garlic and cilantro, close the lid and allow to stand 10 minutes

Serve chickpeas curry with fragrant coconut rice and with a slice of lemon.
