Tangerine cupcake with coconut milk
Surprisingly easy and unexpectedly delicious cupcake with the scent of tangerines. The main difficulty is to buy coconut milk. But I have in the fridge waiting in the wings jar of this product. In principle you can use any citrus fruit or the juice. The taste will be different. Pleasantly surprised by the structure of the cupcake. So fluffy it turned out! The recipe is from the site "Eat at home", altered to my taste.

Ingredients

  • Flour

    150 g

  • Rice flour

    50 g

  • Corn starch

    1 Tbsp

  • Sugar

    140 g

  • Vanilla

    1 pinch

  • Leavening agent

    1.5 tsp

  • Mandarin

    2 piece

  • Vegetable oil

    3 Tbsp

  • Coconut milk

    200 ml

  • Powdered sugar

    20 g

With Mandarin orange to remove the zest, squeeze juice. Need about 50 ml. Mix coconut milk, vegetable oil, tangerine juice, rind and sugar

Mix wheat and rice flour, starch, vanilla and baking powder.

Mix the flour and wet mixture. Stir until smooth.

Form of grease with butter and sprinkle wheat flour. Pour the batter and flatten. Put in preheated oven

Bake at 180C until dry toothpick (about 35 minutes. Focus on your oven). The finished cake to cool 10 minutes in pan, then on wire rack.
