Carp in the salt cloud
It would seem the fish baked in salt is already no one will be surprised. But I'll try. The idea is taken from main fisherwoman of Ukraine Alla Kovalchuk (participant of the project "Master Chef Ukraine") and slightly modified for my taste. Plus, this way – the incredible lightness of coating fish salt coat. Fish goes diet and thus extremely tender and juicy. Filling – a separate song. Even a fish can be cooked not only in the oven, but also on the fire. And it will not be a song, a culinary Opera! In short, come in!

Ingredients

  • Salt

    500 g

  • Egg white

    4 piece

  • Tomato

    1 piece

  • Onion

    1 piece

  • Garlic

    4 tooth

  • Dill

  • Black pepper

  • Lemon juice

    2 Tbsp

  • Butter

    50 g

To start gutting the fish without removing the scales and not cutting abdomen. The first incision near the head. The gills cut out. Remove the insides. Inside RUB the fish with pepper and lemon juice. Leave to marinate.

Tomatoes cut crosswise, pour boiling water and remove the skin. Cut into small cubes. Onion cut into half rings.

Peel the garlic and cut into slices.

With dill interrupts the leaves and finely chop.

Combine tomatoes, onion, garlic, dill.

Potseluem lightly and season with freshly ground black pepper. Spread half of the stuffing in the fish.

A small digression. This recipe has pleased me in that it uses only the whites. And I have quite a lot stored frozen. Often come across recipes where you need only the egg yolks (E.g. Easter cakes). Proteins in this case, can be easily frozen, and then thawed at room temperature and they absolutely do not lose their properties. And so, we bring down the 4 protein in a mixer with a pinch of salt and a couple drops of lemon juice, until stable peaks. The picture just yet downed thawed proteins.
