As for the meat: take prendwick. I have here are thin. This is the most soft and tender part of the pork. If You are confident in the tenderness of their meat you can get your.
Polendina cut into medallions 2 cm thick. Salt-pepper.
Mushrooms cut into slides.
Fry them on medium heat until the complete evaporation of all moisture. 5 minutes.
Add the cream and mustard. Simmer for another 3 minutes.
