Medallions of salmon with rice and mushrooms
After a long post-you really want something tasty. But the stomach unaccustomed to heavy meals. These medallions are very tasty and elegant and at the same time, almost lean. They could not be better suited for the festive Easter table. In the post, these medallions is quite possible to cook without cheese and sour cream.

Ingredients

  • Vegetable oil

Cooking

Clean the fish, remove the head, fins, tail. Cut into pieces with a thickness of 3 cm With a sharp knife, remove the backbone and rib bones. Using tweezers, remove any remaining bones. Fish season with salt and pepper.

Boil the rice. I used long grain parboiled rice from TM "Mistral".

Onions and mushrooms chop and fry in vegetable oil.

Boiled rice mixed with sautéed mushrooms. Season with salt and pepper, add a tablespoon of sour cream. Mix well and stuff the fish. Ready medallions tie with green onion.

Put medallions in a well greased baking dish. Sprinkle with grated cheese and breadcrumbs.

Bake in pre-heated oven for about 30 minutes.

As a sauce you can use sour cream made from thick cream with chopped dill and lemon juice.
