Pancake cake
Coming to the end of Pancake week. I wanted to cook something fancy pancakes. What it could be? Of course the cake!!!

Ingredients

  • Flour

    800 g

  • Yeast

    15 g

  • Serum

    250 ml

  • Sugar

    4 Tbsp

  • Chicken egg

    2 piece

  • Milk

    3 cup

  • Water

    0.5 cup

  • Salt

    1 tsp

  • Soda

    0.5 tsp

  • Cheese

    200 g

  • Sugar

    300 g

  • Walnuts

    6 Tbsp

  • Chicken egg

    2 piece

  • Salt

    1 pinch

  • Raisins

    30 g

  • Cocoa powder

    1 Tbsp

  • Butter

    1 Tbsp

  • Jam

    3 Tbsp

First make a thin yeast pancakes. All sift the flour in a big bowl or pan. For the dough yeast grind with 2 tbsp of sugar, pour the warm whey, add about half a Cup of flour from the total mass. Mix well and pour into the well in the flour. Give the dough to come.

When the sourdough is ready (it will start to slightly fall off and cracks appear on the surface), add the remaining ingredients (the soda is added at the end) according to the recipe, mix well, give a little dough rise.

Bake pancakes.

Now collect the cake! All products for stratum I consists of three repeating layers. In a form with high sides to put the first pancake and sprinkle with 2 tablespoons chopped nuts with sugar (I always took sugar to taste from the total specified amount). Put another pancake and repeat.

To cover the next pancake. Spread 2 tablespoons cottage cheese filling (cottage cheese mix with sugar to taste, add 2 egg yolks, a pinch of salt and raisins) and spread evenly across the surface.

Next pancake sprinkle with melted butter and lightly sprinkle through a sieve cocoa powder.

It is time to lubricate the damn jam. 1 tablespoon roughly corresponds to uniformly spread over the surface of the pancake. Repeat the layers 2 more times!

Ready to put the cake for 15-20 minutes in a hot oven. Meanwhile, beat egg whites with sugar until stable peaks. Remove the cake from the oven and apply on the surface of the meringue.
