Burgers quinoa with mushrooms and greens

Ingredients

  • Quinoa

    2 cup

  • Mushrooms

    150 g

  • Onion

    1 piece

  • Potatoes

    1 piece

  • Chicken egg

    1 piece

  • Flour

    3 Tbsp

  • Parsley

  • Salt

  • Black pepper

  • Spices

  • Olive oil

Cooking

1. Quinoa ("Mistral") rinse well and boil until tender according to package instructions.

2. Onions and mushrooms finely cut and fry until Golden brown. I have canned mushrooms, but they can be replaced by any other mushrooms.

3. Finely chop the parsley.

4. Jacket potatoes, also finely chop.

5. In a bowl with prepared quinoa add fried mushrooms with onions, potatoes, parsley, salt, pepper, spices, beat the egg, add the flour (or semolina) and mix well.

6. From the resulting mass to form patties and fry them in plenty of olive oil until Golden brown.
