Beetroot and oat muffins
Strange but true, many vegetables in sweet baked goods are often delicious fruit! Beetroot is no exception! Try beetroot cupcakes with a delicate aroma of cardamom and maybe You will discover something new.

Ingredients

  • Beets

    200 g

  • Flour

    160 g

  • Oat flakes

    85 g

  • Rice flour

    4 Tbsp

  • Leavening agent

    2 tsp

  • Sugar

    100 g

  • Cardamom

    1 tsp

  • Chicken egg

    1 piece

  • Milk

    170 ml

  • Vegetable oil

    3 Tbsp

  • Salt

    1 pinch

Cooking

The flakes to grind into grist with the help of a blender.

In a large bowl mix the sifted wheat and rice flour, crushed cereal, sugar, baking powder, salt and cardamom. Stir.

Beets grate on a fine grater.

To flour mixture add the grated beets, milk, egg, oil. Knead the dough.

The dough is obtained as thick cream.

Spread the dough in molds and put in a preheated 180C the oven. Bake for 30-35 minutes.
