Rice with vegetable caviar
White rice layered with vegetable caviar will decorate not only casual but festive table. A hearty vegetarian dish.

Ingredients

  • Eggplant

    2 piece

  • Sweet pepper

    1 piece

  • Tomato

    3 piece

  • Parsley

  • Garlic

    1 tooth

  • Olive oil

  • Bow white

    1 piece

  • Salt

  • Allspice

  • Sugar

Eggplant and sweet pepper bake in oven at 180 degrees about 30-40 min. Remove peel (before that, you can put the vegetables for 10 minutes in a plastic bag).

Grind in a blender or just finely chop eggplant, peppers and tomatoes. I used canned tomatoes with fresh need to remove the skin, rinsing them first with boiling water.

Finely chop the onion and fry in butter. Add the chopped vegetables. Season with salt and pepper, add sugar to taste.

Simmer for about 20 minutes until the liquid evaporates. For 5 minutes before the end add the crushed garlic.

According to the instructions on the package to boil the rice.

Put layers of vegetable caviar, parsley, rice, again vegetables, herbs and rice.

The last layer decorate with parsley.
