Cooking
First prepare the pancakes. Room temperature food.
Part of the milk (150 ml) heated to make it warm. Add the yeast (instant dry yeast "SAF-MOMENT") and sugar. Stir, leave for 15 minutes to activate.
Then mix the egg, salt and remaining milk
Add the coming up of yeast and flour. Set aside in a warm place for an hour. Cover with a towel or film.
In approaching the dough add the melted warm butter. The dough is very porous, vesicular.
Bake pancakes with two sides until Golden color. Cools, you can cover and put into the refrigerator. I have clipped them to the cake was smooth.
Prepare the cream "of Patissier" with orange taste. Very tasty sweet cream. I took corn starch, but potato or half-and-half starch and flour.
To start, mix the yolks with the sugar and starch with orange juice (so we will avoid lumps). And then connect both masses. The orange zest. Mix well!
Meanwhile, heat the milk almost to a boil but do not boil. And pour it into our a lot of egg yolks, sugar and starch. Then return a milk-egg mixture on the stove (choose cookware with a thick bottom, or uvarovite in a water bath), ovarium cream until thick. After the first gurgling cook for 4-5 minutes, all the while intensely disturbing.
Cream cover with film and in the contact and let cool completely. Then you can put it in the refrigerator to cool. Then take cream cheese (I use mascarpone), beat until fluffy and spoon add our chilled custard. Continue whisking. Custard the basis it took me half.
Harvested in shape, made of Board with plastic wrap, alternate pancakes with cream.
Put them in the cold for at least 6 hours. Then decorate as desired and drink the tea!
