Spaghetti with vegetables in coconut milk
I present to you spaghetti... Slightly sweet, with a ginger note. Buried in vegetables. Great, easy, healthy option for lunch or dinner.

Ingredients

  • Eggplant

  • Zucchini

    1 piece

  • Pepper

    1 piece

  • Ginger

    1 Tbsp

  • Corn

    2 Tbsp

  • Coconut milk

    150 ml

  • Curry

    2 Tbsp

  • Spaghetti

    200 g

Cooking

Cut into small cubes zucchini. Fry until transparent in vegetable oil.

Add the dice eggplant slices and 2 colors of peppers!
