Pilaf is one of the most favorite and popular Turkish dishes as well as daily food and the ritual dish prepared for important ceremonies and celebrations. One of the varieties of Turkish pilaf - pilaf with meat balls, quick to prepare, beautiful and delicious.

Cooking
Onion cut into small cubes.
Eggplant cut into small cubes. Add salt and leave for 30 min then Pat dry with paper towel. In a saucepan, heat olive oil, fry the eggplant for about 5 minutes.
Add the onion, fry on medium heat for 2 minutes.
On a dry pan lightly fry the pistachios.
In the beef add the cinnamon, coriander, pepper, cumin and salt. Roll of forcemeat small balls. In a frying pan heat a little vegetable is low and fry the balls until it will turn brown.
Tomatoes cut into several pieces and fry together with the meat.
Wash rice. Before cooking pilaf rice must be kept in salted water.
On the frying pan to the eggplant and onion, add the rice, cumin, coriander, cinnamon. Pour the boiling chicken broth, add salt and mix well. Close the lid, reduce the heat and simmer the rice until fully absorbed broth.
In cooked rice add the meatballs, tomatoes, eggplant, pistachios (ground fork), fresh herbs and currants. Mix gently
