Cooking
RUB the cleaned trout with salt, spices and herbs (mine is thyme, rosemary, white pepper). Pour in the white wine. Make slits on the fish.
Then put in a cellophane package (so it is as is in the marinade) and put into the fridge for a couple of hours, I usually marinate the late evening and left overnight.
On a baking sheet lay out the first layer of the onion, cut into rings, the second mini tomatoes or cherry tomatoes, lightly seasoned with herbs (thyme, rosemary), salt and pepper, dry onion.

Lay the fish on a baking sheet. Cover with either a lid or foil.
Put into the oven at 180 degrees for 20 minutes. After a time, remove the lid and leave still for 20 minutes.
