Vegetable ragout
A delicious, rich vegetable stew. This stew is sold in stores under the name "Astrakhansk OE", but it's made with local vegetables, I called it "the Volga ". Homemade always tastes better.

Ingredients

  • Beans

    50 g

  • Cabbage

    500 g

  • Potatoes

    2 piece

  • Carrots

    1 piece

  • Onion

    2 piece

  • Tomato paste

    3 Tbsp

  • Sugar

    0.5 Tbsp

  • Salt

  • Bay leaf

    2 piece

  • Black pepper

  • Allspice

    3 piece

  • Vinegar

    1 tsp

  • Minced Turkey

    300 g

  • Garlic

    1 tooth

  • Suluguni cheese

    6 slice

  • Salt

  • Black pepper

  • Bread crumbs

  • Vegetable oil

Cooking

My beans and soak at least 4 hours. The water is drained pour the new rate of 1:5 and cook for 1 hour.

In forcemeat add finely chopped garlic, salt, pepper and knead well.

Divide the stuffing into six parts, each put a piece of cheese. Shape the meatballs.

Coat the meatballs in breadcrumbs.

Potatoes wash, peel and cut medium dice. In a deep frying pan heat oil and put potatoes. Cook stirring occasionally.

Onions and carrots peel and also cut into a medium dice. Put it to the potatoes.

Cabbage cut into squares and lay in the pan.

Vegetables salt and pepper, stir, cover with lid and cook on a slow fire.

Once the cabbage is soft add to the pan the tomato paste, half a Cup of water, vinegar, sugar, allspice and Bay leaf. Stir, cover and continue to cook.

When the cabbage is ready, add to the pan of beans, stir and cook 5 minutes. Allow to stand, covered for 1 minute.

The meatballs fry in a pan on both sides until cooked.
