Cooking
Boil the duck until cooked (add salt during cooking), drain the broth, boil the basmati rice by adding turmeric.
Duck cut in small pieces. Using a knife for cleaning of vegetables cut the zest from half the orange and cut it into sticks. In a saucepan heat the oil, put the zest, and then duck. Sprinkle with red pepper (sweet or hot - to taste). Sauté for 2-3 minutes, then pour in the orange juice and leave on the heat for another couple minutes, stirring occasionally.
Place on a plate with rows of rice and duck. Serve with sauce (yogurt + a pinch of turmeric).
