Salad
I offer you my version of a delicious mixed salad for the winter.

Ingredients

  • Zucchini

    1 kg

  • Eggplant

    1 kg

  • Carrots

    1 kg

  • Onion

    1 kg

  • Tomato

    2 kg

  • Garlic

    1 piece

  • Parsley

    1 coup

  • Red sweet pepper

    3 piece

  • Black pepper

    1 tsp

  • Sugar

    1 cup

  • Salt

    2.5 Tbsp

  • Vinegar

    1.5 Tbsp

  • Vegetable oil

    300 g

Products weight I wrote already cleaned. Tomatoes mince, carrots grate on a coarse grater, zucchini cut into thin slices, onion cut into thin strips, pour vegetable oil, mix well. Put on fire, bring to a boil and cook for 50-60 minutes.

Cut eggplant into large chunks, boil in lightly salted water.

Drain the water, wash the eggplant.

In cooked vegetables add eggplant, salt, sugar, chopped parsley, chopped hot pepper, ground black pepper, stir and cook for another 30 minutes.

5 minutes before end of cooking add the chopped garlic and vinegar. Arrange the salad on hot sterilized banks, roll up banks and flip the wrap. I got 8 bottles of 0.7 l. Bon appetit!
